Ideas for Weekday Meals

So I don’t know about you, but I constantly struggle with finding easy meals to make during the week. Although I love to cook and make meals with many ingredients, there’s no way I can manage that during the week. We have one to three activities after school every weekday.

At the same time, I don’t want to eat the same meals over and over again. I get daily emails from the Epicurious website with new recipes. Many of them have been great additions into our weekly meal schedule. You should def sign up for that if you are struggling with ideas. Occasionally, they also send out great cocktail recipes! :)

I’ve listed some of my favorite go-to weekday meals. You can google them and a list of recipes will come up!

We don’t eat beef or pork, so all these ideas will be Regan family friendly.

  • Tacos with black beans or ground turkey
  • Pasta with fresh veggies like cherry tomatoes, arugula, mushrooms and butter/olive oil.
  • Roast chicken
  • Spinach & cheese quiche
  • Daal & Rice (daal is an Indian lentil dish)
  • Turkey burgers
  • Spinach/Mushroom/Cheese Quesadillas
  • Grilled shrimp or chicken
  • Tomato Soup & Grilled Cheese
  • Grilled chicken sausages from the Whole Foods meat counter. (They have a bunch of different types. And also have pork sausages for those who eat it)
  • Homemade fish sticks
  • Spinach/Cheese or Bean/Cheese enchiladas
  • Salad w/ greens, avocado, grilled chicken, carrots, cucumbers, tomatoes (jicama is great too!)
  • Stir fry with tofu or chicken with fresh veggies
  • Turkey & bean chili
  • Skillet fish with herbs

Easy side dishes:

  • Roasted carrots, cauliflower or brussel sprouts - Throw them in the oven with some olive oil and they are done in 15-20 minutes.
  • Mashed Potatoes
  • Corn on the Cob
  • Black Beans
  • Sautéed green beans or snap peas
  • Garlic Bread
